Pistachio garlic pesto

Pistachios are alright. I love their flavor, but besides snacking, most people associate them with sweets. In ice cream, puddings, cakes, cookies, shortbread, yadiyada.

But something magical happends when you combine this humble morsel with avocado oil, garlic and salt and run it thru a blender.

It turns into this magic paste that you want to slather onto everything. Spread thin on pie crust and baked in the oven or married with beautiful whole egg noodles and parmesan cheese. Its great just by itself on crackers or as a dip with vegetables but when heated it becomes something your taste buds will learn to crave.

For the base recipe I combined

  • 3/4 cup shelled pistachios
  • 1/4 cup of avocado oil
  • juice of 1 Meyer lemon
  • 3 garlic cloves
  • salt and pepper to taste

Combine everything in a blender until it turns into a coarse paste and enjoy.

I have made my share of variations with this, by adding some arugula or fresh parsley, parmesan cheese, lemon rind or curry.
