Pasta with Pistachio Pesto

Yup, the name is a mouth full and once you taste it, you want more of it. It is simple, quick and absolutly delicious.

The recipe for the Pistachio pesto is in the previous post. So all you need to do now is to grab a pot to boil some water and and look forward to a tasty meal. I made this dish for my family last night and it was a hit. While the recipe is very simple it has layers of flavor and keeps your taste buds interested.

My family likes pasta. All kinds of it and though I try to be a bit better about my carbs its just a lost battle. I mean who am I kidding. Im German. I LOVE carbs. Crusty Bread, homemade noodles, bread dumplings, hello…

I’ve been substituting pasta that is low carb for some regular quick meals, tried lentil noodles, or rice noodles but there are some recipes where it just has to be the real thing. Some recipe just scream for whole egg rich Tagliatelle noodles, to be the perfect canvas that holds all the flavor. I just cook less pasta and make more salad which is usually part of our dinner anyway.

Here are the ingredients

  • 8oz of whole egg tagliatelle noodles (that’s about 8 “nests” of pasta so two per person
  • 4 oz. pancetta diced
  • 2 TBS prepared Pistachio Pesto
  • 10 oz. frozen spinach thawed and squeezed
  • 1 TBS Ghee
  • 1/2 cup shaved parmesan cheese

Direction:

1.) Bring a large pot of salted water to boil and cook your Tagliatelle al dente. This should take not more than 7-8 minutes. Drain, dont rinse your pasta. Reserve 1/2 cup of the pasta water.

2.) While waiting for the pasta, heat the Ghee in a big frying pan, large enough to hold your cooked pasta in the end

3.) Fry the pancetta in the Ghee over medium heat. Reduce heat to medium low and add your Pistachio pesto until the garlic and the pistachio release their fragrance . Add the spinach and pasta water. Mix until well combined and heated thru.

4.) Add the drained Tagliatelle and blend well with Pistachio spinach mixture. Turn your heat off and let the noodles releax in the mixture for about 5 minutes to soak up the flavor. Just before serving top the pasta with parmesan shavings and cracked black pepper if desired.
