Rotisserie Chicken Wrap

Lately, Chicken Wraps are a big thing at my house. Feeding a Teenager during Basketball season seems a bit like throwing food in an endless pit. However my oldest is also worried about his calorie intake, protein etc. Working his body five times a week, I want meals for him  that are quick and not loaded with empty calories. Wraps are a good choice. We love them with crispy chicken as well but today Im gonna tell you my sons favorite rotisserie wrap. Its very simple and tastes great hot or cold.

The trick is to get the cold rotisserie chicken at your deli, pull the meat of the bone and roughly chop it. My whole family prefers dark over white meat and a rotisserie chicken gives you a good variety of both. They are usually pretty well seasoned so no need to add extra salt.  As a bonus, you can also use the leftover carcass and skin to make soup.

Ingredients

  • 4 whole wheat wraps (we also like spinach, sundried tomato and pesto wraps)
  • One cup rotisserie chicken, skin removed and roughly chopped
  • One cup lettuce (and I mean real lettuce not shredded iceberg. We like buttercrunch, Boston and spring mix varieties
  • 1/2 shredded cheese
  • 1/2 cup cocktail tomatoes quartered
  • 1/4 cup of your favorite dressing (for my kids its Ranch hands down)
  • Franks hot sauce to taste

Directions

  1. Combine the chopped chicken with dressing and hot sauce.
  2. Add the shredded cheese and tomatoes
  3. Add the lettuce and gently toss to coat
  4. divide mixture between wraps, fold up and VOILA

Of course you can eat them just like that, with some fruit on the side like grapes or strawberries. If we make them for dinner and want something a bit more hardy, we like to add rice to them, you know the microwave pouches? One bag goes a long way when added to the mixture. In that case I heat the chicken with the rice and add the lettuce just before we eat.

As odd as it sounds, we also made the chicken wraps before with a side of tomato soup and dipped them in the soup, lettuce and all. Maybe the next time you need a quick meal you will give it a shot. (If you ever dipped French fries in a vanilla shake, you have no argument against it…lol)
